HAPPY BIRTHDAY, MEGAN!
We don’t know Megan’s actual birthday – she and her sister, Amy, found their way to a friend’s house and I took them in just until we could find their home or a new home for them…..that home ended up being mine! The vet estimated they were about 8 weeks old at the time. So, we backed up 8 weeks from when they found us to the week of August 15th……and we have celebrated their birthdays during this week every year since! Amy passed away in January 2015 and Megan turned 11 this week!
Here is my Megan with her sister, Amy, the day they came to live at my house (for what was supposed to be temporary…..yeah, right) and a couple more recent photos of my old gray lady!!!

NEW HELLO FRESH BOX:

New box of great looking meals arrived, today! I am going to try to do it differently this week…..I found when I took out the wrapped “second” plates to eat a few days after they were cooked, that they were no where near as good as they were when they were fresh…..reminded me why I am not a fan of leftovers! They were still “OK” and I ate most of them – meats were still good and some of the sides, but parts were rubbery and/or overcooked after warming up, so went in the trash can. So…..to avoid wasting food, I am going to try to only cook 1/2 the meal at a time – then, both plates will be cooked fresh AND I can learn from whatever I think I might like to change the second time around! hehehe We’ll see how that goes!

I went up to get ready for bed and found Megan and Lamb Chop (Megan’s favorite toy) all cozy in the bed! The bed was made up before she went up, but she wanted to make a comfy spot for her and her friend! 🙂

Then, she thought Lamb Chop was too far away, so she pulled her in for a hug and snuggle! Aaawww!!!

My third and final Hello Fresh meal of the week was Sweet-as-Honey Chicken with Snow Peas over Jasmine Rice. Another excellent meal…..I did make an alteration, though – I like snow peas, but not as many as they sent – I prefer a few in a medley of other veggies. So, I only used a few and supplemented the meal with some baby peas I had in the freezer. YUM!!! That’s it for this week…..the rest of the week I’ll be eating plate # 2 of each of the three meals and/or finding something worth eating! 🙂

August 2017s Photo Prompts:

This evening, I attended the second in the annual series of Walking Tours of local Albion cemeteries held in August each year. Tonight’s tour was of the Old St. Joseph’s Cemetery on Brown Road. This cemetery had some interesting stories and rich history relating to the Catholic immigrants that formed the St. Joseph and St. Mary Assumption Churches in Albion. This was the first cemetery dedicated to Catholic burials in the area – a precursor to the current St. Joseph Cemetery on Rt. 31.
Here are some photos I took during the tour:
Many of the graves are unmarked or modestly marked because the immigrants could not afford expensive stones to mark the graves of their loved ones. Also, some were exhumed and moved to the new St. Joseph’s Cemetery once it was established. So, it looks like there is a lot of empty space….but, in reality, there are people buried there, just may not have markers. But, the graves that are marked make for some interesting photographs…..and some were quite extravagant for the times and the poor status of the people.

One of the more recent graves…….I assume based on their dates, that they may have purchased their plots prior to the new St. Joseph Cemetery opening in the 1920s and decided to keep their plots in the old cemetery when they had the option to trade for spots in the new cemetery.

In the back of the cemetery, the sun was so pretty shining through the trees…

Next week, we tour the current St. Joseph’s Cemetery on Route 31. Then, the final tour of the series will be back at Mount Albion.
It has been a while since I’ve popped over to Point Breeze to see the sun setting on the lake….yeah, its been a busy summer, but that is no excuse to not do something I love so much! Well, since my Photo of the Day photo prompt was “Starts with L”, I took advantage of the chance to go to the Lake! hehehe
So, here are the photos I took……I didn’t stay too long, but it was long enough to see the beauty and capture some awesome shots!

My second Hello Fresh meal was AMAZING……Roasted Pork Tenderloin with Lemony Potatoes and Zucchini! Another super easy recipe that was filling and delicious!!! The ingredients were all fresh and beautiful and complimented each other perfectly! Again, it was a meal for two, so I had a plate to eat and one to wrap up for another night! I think getting these meals is waking up my love of cooking and giving me a reason to eat at home! 😀

Look at the size of the HUGE cones on my Pinky Winky Hydrangea bush, this year!!! WOW!!!

The bush is LOADED with them! I have two more of these bushes, but they are younger and the cones are much smaller!

AND MORE – DINNER PLANS – DOTD (dinner of the day):
I decided to try one of those meal plan companies that send you all you need to make a few meals each week. I chose “Hello Fresh” for my trial. So far, I’m pleased with it……the ingredients are fresh and of high quality…..the recipes are easy……there are enough choices to ensure I will find meals to choose that I should enjoy……everything comes packed separately, so I can be flexible with foods I can’t eat or don’t particularly care for – for instance, tonight’s meal called for mozzarella cheese in the pasta salad, but I’m allergic to cheese, so I was able to just leave it out – also, the chipotle power was not already added to the BBQ sauce, so I could add just enough to make it within my spicy tolerance! 🙂 So — I got my first box this week and fixed my first meal, tonight! I get the “meals for two” – 3 meals a week option – so, I can actually get six meals out of the boxes each week – each night I cook the two servings – one to eat and one to wrap up for another night! So far, so good! Tonight’s meal was soooooo good! And, it was a good sized portion – I was full and then some!

This is everything that comes in the box for this particular meal – tonight’s meal was Chipotle BBQ Chicken Thighs with Pesto Pasta Salad!

Excellent! Very tasty and filling! Two Chipotle BBQ chicken thighs and the salad was made of charred zucchini, charred red onions, penne pasta, a variety of heirloom grape tomatoes, and pesto – it also called for fresh mozzarella, but I left that out!
And, I have another plate just like it in the fridge for another night!
AND…..there was pasta salad left over after I put a generous portion on each of the two plates!

August 2017s Photo Prompts:

On Monday, my friend, Cathy and I took a bus to the Thousand Islands for a day trip. The tour consisted of time in Alexandria Bay, NY for shopping, the boat tour of the Thousand Islands portion of the St. Lawrence River (including lunch), time to tour Boldt Castle, and a dinner stop at Cracker Barrel on the way home. It was a LONG day, but a fun day. Neither of us had been to the Thousand Islands since we were kids and neither of us had ever toured Boldt Castle, so it was a nice adventure for us both.

When I was little, my family used to go camping at Henderson Harbor in the Thousand Islands. I have many fond memories of the times we spent there fishing and camping and having fun. A couple times, we took the boat tours, but never made the stop at Boldt Castle for the tour. 
Here I am in 1968 at 12 years old showing off the fish I caught with a couple of the islands behind me.
The Thousand Islands stretch stretch out about 50 miles in the St. Lawrence River (which starts at the northeast corner of Lake Ontario, connecting the Great Lakes with the Atlantic Ocean just down stream from Quebec City) and are part of the international boundary between the US and Canada. Most of the islands are on the Canadian side in the Providence of Ontario, but many of the largest of the islands are on the US side in the state of NY. None of the islands straddle the US/Canadian border, however, a popular bit of trivia is that Zavikon Island is a pair of islands in which the larger is in Canada and the smaller in the US with the smallest International footbridge in the world joining them….this, per Wikipedia, is not accurate – both Zavikon is completely inside the Canadian Providence of Ontario…..cool story, though!
There are actually 1,864 islands in the archipelago. In order to be counted as one of the Thousand Islands, emergent land in the river must have at least one square foot of land above water all year round and have at least two living trees. Some of the islands are large enough to contain small communities – the largest being Wolfe Island at 40 square miles – some are smaller single residence islands, and some are tiny uninhabited outcroppings of rock. And, there is only one artificial, man-made island – Longue Vue Island.

We stopped in a shop selling wonderful pieces by local artists – I bought three necklaces!

Along the walkway to the artist shop, we found these shoes on sticks with portulaca growing in them among the hostas! How cute is that!!!???

During the recent flooding, this home owner tethered his house to the tree on the island to keep it from sliding off the foundation into the river!

This island and home is owned by a former NFL football player…..his home is pink because he left the decision of the house color when it was painted up to his granddaughters! 🙂




This is Zavikon Island – I talked about the popular story about this island in my intro paragraphs – the foot bridge has the Canadian flag on the left and the US flag on the right and it is said to be the shortest international foot bridge in the world…..an incorrect story, as the entire island complex is in Canadian waters.



Approaching Boldt Castle
Boldt Castle sits on Heart Island – originally named Hart Island after the original owners, but George C. Boldt renamed it Heart Island – it is believed he renamed it because of his love for his wife. Mr. Boldt immigrated from Prussia in the 1860s as the son of poor parents. He built his fortune in the hotel industry – he was the owner of the famous Waldorf Astoria Hotel in NY City, as well as other large hotels and was the president of several other large companies. He built Boldt Castle at the turn of the century for his wife, Louise, as a testament to his unsurpassed love for her. He invested $2.5 million to erect this extravagant Valentine’s Day gift for his wife. Unfortunately, Louise died in 1904 before the castle was completed and George never finished it or returned to it. The original Hart residence that was on the island prior to Mr. Boldt’s construction of his castle was slide on the ice to nearby Wellesley Island and is now being renovated into a B&B aptly named Hart House. Boldt Castle is now owned and maintained as a tourist attraction by the Thousand Islands Bridge Authority.

Alster Tower – the only structure that was completed. It was to be the Boldt’s Playhouse and was where they lived for four years the castle was being built. It was to include a bowling alley, a shell room for dancing, a billiard room, library, and guest accommodations.

I didn’t take my camera…..wish I had……and my iPhone was dying just about the time we were finishing the tour of Boldt Castle, so that is the end of my photos! 😦
It was an amazing day……left the house a little before 6:00 am and returned home about 9:30 pm with a long bus ride up and back, but it was worth it! I very much enjoyed every bit of it…..just wish the sun would have been out more, but I guess we can’t have everything!
